The perfect side to any Mexican inspired dish!
Ingredients
- 2 cups of Jasmine Rice
- 2 Limes
- 1/4 cup of fresh chopped Cilantro
- Salt
- Olive Oil
My favorite rice to use with this recipe is Jasmine Rice but any rice would work. I also prefer to use a rice cooker. I highly recommend getting one for perfect rice every time.
Rice Cooker Method:
Add 1 cup of rice into the rice cooker. Then pour 1 1/4 cups of water into the rice cooker. Mix 1 tsp of olive oil and 1 tsp of salt. Stir and Start. * I always choose the brown rice setting for all rice types. I like the texture I end up with better.
Stovetop Method:
Add 1 cup rice and 1 1/3 cups water to a saucepan with a lid. (I usually use a stainless steel pan for this – but not necessary). Add 1 tsp of Salt. Cover the saucepan and bring the water to boil.
Reduce the heat to low, and let the rice simmer for another 9 to 10 minutes, until all the water has been absorbed. I usually use a smaller burner for simmering.
Turn off the heat, and leave the saucepan covered for about 10 to 15 minutes. Uncover the saucepan and fluff the rice with a fork.
Once the rice is finished add about 1/4 cup of chopped fresh cilantro. And the juice of 2 limes. Stir to combine and you’re ready to serve!
