Shrimp Tacos w/ Mango Salsa

Shrimp tacos are the easiest to make and pair perfectly with my homemade Mango Salsa! Light and satisfying!

Ingredients

serving size: 4 – 6 tacos

  • 1 pound of shrimp (peeled, deveined and tails removed)
  • seasoning for shrimp (I use Chili Limi Seasoning from Trader Joe’s but Old Bay or just Chili seasoning works well)
  • 1 mango or 1 cup of diced mango
  • 1/4 cup red onion
  • 1/4 cup of chopped cilantro
  • 1/2 diced jalapeño
  • Juice of 1 lime
  • olive oil
  • salt to taste
  • sour cream & avocado for garnish
  • Cilantro Lime Rice for base

 

Clean, peel & devein the shrimp. I keep the tails on as I cook the shrimp to hold in the flavor and juices. Mix shrimp in a bowl with olive oil and Chili Lime seasoning and set aside while you make the mango salsa.

To make the mango salsa, peel and dice one mango. Add diced red onion, chopped cilantro and diced jalapeños (remove the seeds if you don’t like spice). Combine with the lime juice and a drizzle of extra virgin olive oil. Add salt to taste. Set aside.

Heat a pan or skillet on high heat. Sear the shrimp for 2-3 minutes on each side.

Add your tortillas to a skillet to lightly char. Then build your tacos. You can use shredded lettuce as a base or Cilantro Lime Rice. Take the tails off the shrimp before plating, and then top with the mango salsa.

Optional: garnish with sour cream and avocado.

 

*This is the Trader Joe’s Chili Lime seasoning I used for the shrimp. Also great to use for the rim of your margarita glass instead of salt!
